Normally, no. I like my meat. So does T. But then I noticed
this recipe and it looked so good I had to give it a go. And as I adapted it a little, and remembered to take photos as I went, I'm sharing it. It is simple, cheap, quite quick and very tasty.
Ingredients{A few torn basil leaves, spaghetti, a clove of garlic, parmesan cheese, tin of chopped tomatoes, a red onion and a small aubergine. Also - olive oil, salt and pepper.}Step 1{Chop aubergine into small sticks and fry until soft and golden.}Step 2: When the aubergine is done put it aside on a plate and season with salt and pepper.
Step 3:
{Chop the onion and garlic, and fry until soft.}Step 4: Add the tomatoes and simmer for ten minutes. Then add the aubergine back in.
Step 5:
{Serve with spaghetti, sprinkle with grated parmesan and enjoy!}
mmm.. this looks yummy! we have an aubergine lying around, & im sure i can find some spaghetti :o) will be trying this, thankyou!
