Vegetarian? Me?

Normally, no. I like my meat. So does T. But then I noticed this recipe and it looked so good I had to give it a go. And as I adapted it a little, and remembered to take photos as I went, I'm sharing it. It is simple, cheap, quite quick and very tasty.
Ingredients

{A few torn basil leaves, spaghetti, a clove of garlic, parmesan cheese, tin of chopped tomatoes, a red onion and a small aubergine. Also - olive oil, salt and pepper.}

Step 1

{Chop aubergine into small sticks and fry until soft and golden.}

Step 2: When the aubergine is done put it aside on a plate and season with salt and pepper.

Step 3:
{Chop the onion and garlic, and fry until soft.}

Step 4: Add the tomatoes and simmer for ten minutes. Then add the aubergine back in.

Step 5:
{Serve with spaghetti, sprinkle with grated parmesan and enjoy!}
